Gyle #12 – Juniper Rye IPA v2

The second attempt at making a rye IPA. Largely the same recipe as the first one, but more rye and different hops. Also removed the crystal malt as it didn’t really add anything and this one is busy enough already.

5kg Golden Promise
1kg Pale Rye Malt

25g Warrior 17.8%AA @ 60 mins
25g Juniper Berries @ 10 mins
25g Amarillo 8.5%AA @ 10 mins
25g Simcoe 13.2%AA @ 10 mins


25g Amarillo dry hop 4 days
25g Citra dry hop 4 days
25g Simcoe dry hop 4 days

Mash @ 67C for 60 mins

Fermentis US-05 dry yeast

Again the dry hop was done in secondary 4 days before bottling. While the rye amount had been doubled, the potency of the US hops completely overshadowed both the juniper and the nutty rye flavour. The nuttiness was there, but it seemed to be competing with the hops. This one came out more like a standard American IPA rather than the unique flavour I was aiming for. With no time before the festival to try another test batch I had to decide to either tweak it again and hope, or revert to the (better) first recipe. Neither came out what I wanted, so v3 was the only answer!
